Easy Home Made Mexican Tamales with Belinda Rodriguez

Tamales are a great crowd pleaser any time of year, and they are best made with a group. At this hands-on class you will get the recipe for and prepare 2 fillings (vegetable and pork) and fill tamales with them. Enjoy a light lunch in between the two activities. Tamales freeze well and are fun to serve over the holidays.
Guests will be greeted with a glass of Agua de Jamaica and a packet of all of the recipes. Our instructors are Belinda Rodriguez, an experienced home cook from Woodland, and, Ann Evans, author of the Davis Farmers Market Cookbook. We begin with making guacamole in a Molcajete, followed by a review of the recipes and dividing into teams of 2. Once the fillings are made, we will review and make the lunch recipes. Enjoy Chilaquiles with Salsa de Chile de Arbol and beans for lunch.
WHO: Slow Food Yolo members and guests, limited to 6 participants – first come first serve basis.
WHAT: Tamale Making Class – Pork Tamales Rojos and Vegetable Tamales. Learn to make a green sauce with fresh tomatillos, a red sauce with several kinds of dried red chili peppers, and how to prepare fresh Poblano peppers for use in the vegetable filling. Learn to fill and assemble tamales in cornhusks. You will also learn to make guacamole in a Molcajete, Chilaquiles with Salsa de Chile de Arbol and beans from the dried bean.
WHEN: Saturday, November 9, 2019 - 10 AM – 3 PM
- 10:15 am – arrive and get set up
- 10:30 am – 12 pm: Prepare the fillings and lunch
- 12 pm – 1 pm: Light lunch
- 1 pm – 3 pm: Learn how to fill husks and assemble
TAKE HOME: Approximately 12-15 tamales to steam and serve or freeze
